Hey everyone.. hope you are all enjoying the first half of April. The weather in Denver has been a mixed bag lately, but man, those first tastes of spring are upon us and it sure feels good. I hope you are all enjoying the changing seasons in your own ways!
I try to post recipes about twice a month and wanted to get this recipe posted back in March, but alas, here it is. I had a few cans of beans left over from the last recipe I posted (view it here) so I decided to give ya'll this super easy, delicious and healthy black bean dip recipe.
This is a really quick and fun recipe, throw it together for friends at your next gathering or make a bunch for yourself for healthy snacks on the go.
This recipe is easiest to make with an immersion blender (pictured right), but you can also use a regular blender or mash it yourself with a potato masher (or anything else you can find). The recipe calls for celery or carrot sticks for dipping (which is delicious), but try your favorite chips if you want something different.
As always, I recommend that you eat 100% organic when possible. And a tip for buying canned anything: ensure the cans you are purchasing are BPA Free (it'll say on the label). Cans of organic beans at most grocery stores are around one dollar per can, and I sometimes find them on sale for under that.
INGREDIENTS:
1 can black beans
2 scallions/green onion
1/2 jalapeno (optional)
1 tablespoon finely chopped cilantro
2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon chipotle powder
1 teaspoon salt
1/2 teaspoon ground cumin
1 cup sliced celery/carrot sticks (for serving)
ITEMS NEEDED:
Medium mixing bowl
Strainer
Cutting Board
Knife
Immersion blender (or regular blender or masher)
RECIPE:
Get your strainer over your sink or near it
Put beans into strainer and wash with cold running water
Shake strainer around to lose any excess water and pour beans into a medium bowl
Finely chop the scallions, jalapeno (optional), and cilantro, add to bowl with black beans
Combine all other ingredients into bowl with black beans and mix well
If using an immersion blender, blend all ingredients in the bowl until desired consistency
If using a regular blender, pour all ingredients from bowl into blender and pulse blend until desired consistency
Slice carrots or celery lengthwise to create dipping sticks
Serve fresh in a clean bowl with carrot and celery sticks or your favorite chips

That's it! Takes about five minutes to prepare and.. so good. Keep leftovers in an airtight container in the fridge and it will keep for up to a week.
